For 24 weeks, I worked in all the stations of the kitchen and pastry as a chef de partie. As commis, I had several Chinese students from the Shanghai Institute of Tourism, who had no idea of French cuisine. I had to train them and teach them the basics of French cuisine.
I also worked at the Purchasing department where I was responsible of all orders and deliveries.
My main tasks were:
- Creating and making daily dishes and à la carte dishes.
- Participating in the creation of the new menu
- Training the Chinese SIT students
